A salad inspired by Ottolenghi’s “figs with young pecorino and honey” salad.

This was quite interesting, the figs and basil and cheese complemented each other so well! Sweet and salty and green. It was very summery!

Ingredients

  • 600 g ripe figs, cut in quarters or smaller
  • 300 g young pecorino or similar cheese
  • 80g rocket
  • 10 g basil leaves

For the dressing:

  • 2 tbsp honey (but I’m a barbarian so I used syrup)
  • 3 tbsp olive oil
  • sea salt and pepper

Watch out to avoid making the dressing TOO sweet like me ? … if in doubt then just don’t add as much honey / syrup as you were going to. I should have known about it, but it turns out that syrup tastes way sweeter than honey! Lesson learnt 😀
