Cornish greens, cucumber & beef curry, brown jasmine rice

We went to KILN last week, but we’ve spent the whole week holidaying and touristing in our staycation and so I haven’t had a lot of time to write things up!

We LOVE going to KILN! đŸ˜đŸ”„

The food is great: aromatic, well seasoned, hot and spicy and it pairs so well with their beer selection. Plus they have a record player out of which they tend to play dub music which we really enjoy as well.

Self isolation, week 3: anything goes!

Pumpkin, cauliflower and korean bacon ramen

We used to do most of our grocery shopping in the shops in the area, but since the ‘outbreak’ and the ‘lockdown’, it all has been really messed up, with shops packed with people but devoid of food.

Now that most of our fresh food shopping comes from erratic and unpredictable home deliveries, and is complemented with whatever we can find when we venture onto the shops once a week, we’ve had to “change our paradigm”.

Or in other words, instead of going from recipe to ingredients, we’re now going the other way: here’s the ingredients, what can you do with them?

Thai (?) green curry

Thai green curry

Note: I’m not from Thailand, so please excuse any horrible things I did to your (sort of) national dish 🙂

I had a horrible day/week, and was really upset by various things that had happened, so I decided the best way to leave that behind me was to focus on cooking something comforting.

Somehow I thought of green curry, but I had not cooked this in a very long time—would I still remember how to do it?

For extra challenge, I decided to try and make it vegan, which is not very hard as the only ingredient from animal source is the chicken. I replaced it with tofu instead. Done!
