This week in food, 2 (11-17 February 2019)

This has been another horribly hectic week, so you’ll have to make do with another ‘this week in’ post for now ??‍♀️

As usual, if you want any recipes, do let me know!

Monday

Vegetarian cobb salad
Vegetarian cobb salad

I didn’t know what I wanted for dinner, only that I wanted something different. I opened a recipe book at random and it presented me with the idea of a cobb salad, which I hadn’t eaten in a long time. But I didn’t feel like having chicken or bacon, so I replaced them with lentils and mushrooms.

This turned out to be SUPER YUMMY and I was extremely pleased!

Tuesday

Overnight oats with chia seeds and apple

One sliced apple for the salad was a lot of apple, so I saved some for some overnight oats to which I also added a lot of chia seeds. This was great for breakfast ?

The next best thing about the cobb salad was that I made a portion for lunch the next day and it was still amawesome! Granted, it ended up looking a bit less pretty after emerging from my lunch box, but it still tasted great ?

Friday

Jumping straight to Friday because the days in between were basically fueled by salads and hummus—and to another of my happy places, Soho Grind. I don’t know who their pastry supplier is (must investigate) but they are always mega yummy. This was great after an early morning yoga class.

I had an exam later on the day, and…

… I passed the exam! ?✌?

And here we are, celebrating at one of our favourite restaurants at the moment, XU. It deserves a full post for itself only, so I’ll leave you with an appetiser for now… ?

Saturday

Grapefruit and coconut

I was not expecting this grapefruit to be as deliciously sweet as it was, and that pleased me to no end! And the coconut’s nuttiness complemented the citrus flavour really well. Yum!

Kimchi stew

“How do you like that I can instinctively cook a kimchi stew without even following a recipe?”

—my partner

“Very much”, the answer is “very much”. And also: “confirming (again) that I married the right person” ?

My Christmas gift this year was a fermentation workshop, from which we came back with lots of kilner jars full of produce to ferment. And we’ve had this kimchi stew a couple of times, using our own home made kimchi! Exciting, hearty, and perfect for chilly days ?

Heart shaped scones

The deliciousness didn’t stop there, because Devvers also got inspired to bake some scones. What have I done to deserve this? ?

And here with clotted cream and jam. ¡La merienda!

Sunday

Aubergine and pork
Aubergine and pork

What better way to finish off the week than with a delicious and satisfying aubergine and pork dish? I can’t think of any other way! ?
